The questions.

Why do you sell out so early?

Brisket takes 14 hours and we don't reheat the next day. We cook for one service per day. When it's gone, it's gone. Get there at 11.

Cash only?

Nope โ€” we take card, Apple Pay, Google Pay, Venmo, and cash. Card is fine. Cash gets you the same brisket.

Vegetarian options?

The cornbread, mac, slaw, and smoked corn are vegetarian. The pinto beans have pork bone (sorry). We're a BBQ truck โ€” we won't pretend otherwise.

What about allergens? Gluten?

Brisket, ribs, pulled pork, turkey, and sausage are gluten-free (no rub contains gluten). Cornbread has flour. Mac has wheat. We use no peanuts. Tell us at the window.

Do you ship brisket?

Yes โ€” Goldbelly. We dry-age, vacuum-pack, ship overnight on Tuesdays. Order on Goldbelly.

Can we hire you for an event?

Yes โ€” see the catering page for options + minimums. Truck on-site requires 3 weeks notice and 75-person minimum.
